BASIC BROILED FISH 
2 lb. fresh fish fillets or steaks
2 lemons
1/4 c. melted butter
Salt & pepper

Cover broiler pan with aluminum foil. Slice 1 lemon with 1/4 inch slices and place on foil. Baste fillets with melted butter and juice from 1 lemon. Sprinkle both sides of fillets with salt and pepper. Place fish in broiler pan on top of lemon slices. Broil fish about 4 inches from source of heat for 8-14 minutes, depending on thickness of fish. Fish will be done when it flakes easily when tested with a fork. Baste once during broiling, but do not turn. If desired, saute assorted vegetables and place on top of fish before serving. Serves 4-6.
