ZUCCHINI PARMIGIANA FACILE 
4 med. size zucchini, sliced about 1/4 inch thick (maybe sliced lengthwise instead of circles)
3 c. your favorite sauce
8 oz. mozzarella cheese, thinly sliced
4 oz. grated parmesan cheese
1 c. fresh parsley, chopped
Salt and pepper to taste

Blanch zucchini in boiling water for 3 minutes and drain. In a casserole, layer zucchini, topping each layer with slices of mozzarella, seasonings, parsley, grated cheese and sauce. When all zucchini has been used, cover casserole and bake in oven at 350 degrees for 20 minutes or until the mozzarella has melted. Let stand approximately 20 minutes before serving.
