FRIED CHEESE BALLS 
1 1/2 c. grated cheese
1 tbsp. flour
1/2 tsp. salt
1/8 tsp. mustard
Few grains cayenne
3 egg whites, beaten stiff

Add flour and seasoning to cheese. Fold in egg whites and shape in small balls. Roll in fine cracker crumbs and fry to a golden brown in deep hot oil.

Drain on paper towels.
