APPLE KUCHEN 
1 pkg. pie crust mix
8 c. apples, pared, and thinly sliced
1/2 c. sugar
1/2 tsp. cinnamon
2 tbsp. butter
2 eggs
1 1/2 c. shredded coconut
Dash salt
1/2 c. sugar

Prepare pie mix as directed. Roll out dough 1/8 inch thick to fit pan, 15 x 10 x 1 inch jelly roll pan. Arrange apples on pastry. Combine sugar and cinnamon. Sprinkle over apples. Dot with butter. Bake at 425 degrees for 20 minutes.

Beat eggs until thick and lemon colored. Add remaining ingredients. Spread over partially baked apples. Reduce heat to 375 degrees. Bake 15 minutes longer. Cool.

Serves 18-20.
