BARBECUED MEAT LOAF | |
1 1/2 lbs. ground beef 1 c. bread cubes 1 sm. to med. onion, chopped 1 egg 1 (8 oz.) can tomato sauce 1/2 c. brown sugar, packed 1 tsp. prepared mustard 1 tsp. salt 1/2 tsp. black pepper In a small bowl mix together tomato sauce, brown sugar and mustard. Set aside. In a larger bowl, mix egg and chopped onion into bread crumbs. Add a small amount of tomato sauce mixture and stir or chop until crumbs disintegrate. Add ground beef, salt and pepper and mix thoroughly, adding more sauce for a very moist mixture. Shape into a loaf to fit a greased glass or aluminum loaf pan. Cover with foil and bake for 45 minutes at 350 degrees. Drain excess grease and spread with remaining tomato sauce mixture. Bake uncovered for 15 to 20 minutes more. Slice and serve. (4 to 5 servings). |
