POTATO CROQUETTES 
2 c. mashed potatoes
1 egg
1 tsp. black pepper
2 tbsp. parsley, chopped
1 tbsp. Parmesan cheese
1 clove garlic, minced
3/4 c. bread crumbs
1 egg, beaten
1 tbsp. water

Thoroughly mix potatoes, 1 egg, salt, pepper, parsley, cheese and garlic. Shape in balls or patties. Dip balls in bread crumbs, then into egg mixed with water and again in bread crumbs. Let stand on waxed paper 20 minutes. Fry in deep fat or oil until browned on all sides. Leftover mashed potatoes work fine.
