2 c. mashed potatoes
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. baking powder
2 tbsp. plain flour
1/4 c. milk
1 egg yolk
1 tsp. water
2 c. bread crumbs

Mix first 6 ingredients well. Beat egg yolk in separate bowl. Add 1 teaspoon water to yolk. Shape potatoes batter for croquettes and roll in bread crumbs and dip in egg mixture, roll in bread crumbs again, fry in deep hot grease until brown.
