SWEET POTATO CROQUETTES | |
2 c. mashed sweet potatoes 1 tsp. salt 1 1/2 tbsp. butter, melted 1 tbsp. sugar 6 marshmallows 1 1/2 c. crushed corn flakes 1 egg white, slightly beaten Cook potatoes until soft. Mash very fine. Season with salt, sugar, butter. Shape mixture around a marshmallow. Chill in refrigerator 30 minutes. Dip croquettes in egg white and roll in corn flakes. Place in flat greased baking dish. Bake at 400 degrees for 20 minutes. |
