SWEET POTATO CROQUETTES 
2 lbs. sweet potatoes
3 tbsp. butter
1 egg
2 tbsp. cream
Salt
Pepper
Cracker crumbs

Boil 2 pounds sweet potatoes. Peel and add 3 tablespoons butter and mash. Add 1 egg, well beaten, 2 tablespoons cream, salt and pepper to taste. Roll in crumbs then in egg and cracker crumbs and fry in deep fat.
