POTATO CROQUETTES 
4 c. hot mashed potatoes
Salt and pepper to taste
1 egg, beaten
2 egg yolks
Cheddar cheese, softened
Corn flakes, crushed

Combine potatoes, egg yolks and salt and pepper, mixing well. Shape around small ball of cheese. Dip in mixture of egg and 2 tablespoons water. Roll in corn flake crumbs. Place in buttered casserole dish. Bake at 350 degrees until brown.
