POTATO CROQUETTES 
6 med. potatoes
1 tsp. salt
1/4 tsp. pepper
3 eggs
2 egg yolks
Cracker meal

Cook potatoes with jackets. When done remove skins and mash well. Add pepper. Beat 2 of the eggs and the egg yolks together until light and foamy and add to potatoes. Sprinkle a pastry board lightly with flour and shape the potatoes into pear shaped croquettes.

Beat the remaining egg slightly. Dip croquettes in beaten egg and roll in cracker meal. Let them stand about 20 minutes and then fry in deep oil, preheated to 375 degrees. Drain on paper towels.

Makes 6 servings.
