SPANISH RICE 
4 slices bacon
1 lb. ground beef
1 green pepper (reserve 4 thin slices pepper)
1 onion
1 tbsp. chili powder
1 (1 lb.) can whole tomatoes
1 1/2 c. water
3/4 c. rice, uncooked
1 (10 oz.) pkg. sharp Cheddar cheese

Preheat oven to 350 degrees. Fry bacon in large fry pan. Remove bacon. Fry beef, green pepper (diced), and onion (diced) in bacon grease until tender. Add chili powder, tomatoes, water, and rice to meat mixture, stirring thoroughly. Cover and simmer until rice is tender and water is gone. Place in baking dish, cover with grated Cheddar cheese. Place bacon and green pepper alternately around center on top of cheese. Bake for 30 minutes.
