MICROWAVE CARAMEL CORN 
10 c. popped popcorn
1 c. peanuts (opt.)
3/4 c. packed brown sugar
1/2 c. butter
1/2 tsp. vanilla

Prepare popcorn, remove unpopped kernels. Place brown sugar and butter in bowl, microwave on High 1 to 2 minutes, or until comes to a boil, stirring occasionally. Microwave an additional 2 minutes, stir after 1 minute. Stir in vanilla. Pour over popcorn, toss to coat. Put 1/2 mixture into a microwave 12"x8" dish. Cook on High 1 to 2 minutes or until well coated, stirring once. Spread on wax paper to cool. Repeat with remaining mixture.

Since microwave ovens vary in power, you may need to adjust your cooking time.
