PICKLED BEETS 
2 cans sliced beets, drained
1 c. sugar
1/3 c. white vinegar
1 c. beet juice

Mix sugar, vinegar and juice. Microwave 1 minute after this has started to boil. Pour over beets, place in tightly covered container, let set several hours. Very handy to have in refrigerator for a spurr of the moment salad item.

Since microwave ovens vary in power, you may need to adjust your cooking time.
