BRANBERRY MUFFINS 
3/4 c. bran
3/4 c. whole wheat flour
3/4 c. brown sugar
1/2 c. wheat germ
1/2 tsp. salt
1 tsp. baking soda
1 c. blueberries, coarsely chopped
1 tsp. grated orange rind
1/2 c. currants or raisins
1/4 c. vegetable oil
2/3 c. sour milk, buttermilk, or plain yogurt
1 egg, slightly beaten

Preheat oven to 400 degrees. Mix together the dry ingredients. Add the berries, orange rind and currants or raisins. Add the liquid ingredients and mix well. Spoon the batter into lightly buttered muffin tins and bake at 400 degrees for 20 minutes.

For an interesting variation, use half blueberries and half cranberries. Makes 12 muffins.
