THREE-GRAIN MUFFINS 
1 c. cornmeal
1 c. soy flour
2 c. whole wheat flour
1 tsp. salt (optional)
2 tsp. baking soda
2 lg. eggs, lightly beaten
2 c. yogurt
1/2 c. sugar (or sugar & molasses)
1/2 c. melted butter

1. Preheat oven to 350 degrees. In a bowl, combine the cornmeal, sugar, soy flour, whole wheat flour, salt and baking soda.

2. Mix the eggs and yogurt and molasses if it is used. Stir into the dry ingredients with the melted butter. Fill muffin pans 2/3 full. Bake 25 minutes. Yield: 2 dozen.
