ALBERT'S SPAGHETTI AND MEATBALLS 
MEATBALLS:

3/4 - 1 lb. ground pork
3/4 - 1 lb. ground beef
1 lg. egg
1 c. bread crumbs (fine ground & seasoned)
2 tsp. salt
1/2 tsp. black pepper
2 tbsp. Parmesan cheese

Mix all above ingredients in a large bowl and form into balls, sized according to your choice. Brown in large frying pan with 1 teaspoon olive oil. While meatballs are browning start the sauce.

SAUCE:

2 tbsp. olive oil
2 cloves garlic
2 (28 oz.) cans crushed tomatoes
1 (12 oz.) can tomato paste
1 (15 oz.) can tomato sauce
1 tbsp. sugar
2 tsp. salt
1 tbsp. basil
1 tsp. oregano
1 bay leaf

Use a pot with at least a 6 quart capacity.

Saute olive oil and chopped garlic on low heat. When garlic starts to brown add tomatoes, sauce and paste, stirring well. Add the next 5 ingredients stirring well. After the meatballs have been browned add to sauce being careful to keep excess oil and grease from getting into the sauce. Cook for 1 1/2 hours at lowest heat possible, stirring occasionally and tasting. Add seasoning according to your taste.

PASTA: Use the following formula for all adults.

6 oz. pasta per adult

4 oz. pasta per family member if small children will be eating

Fill a pot with water, add one to two tablespoons olive oil and at least 1 teaspoon salt. Bring to a boil, add pasta and lower heat slightly. Cook until desired tenderness is achieved.
