BELLEFONTAINE CHICKEN 
My family and friends love this chicken because it is so moist and tender. I love it because it's quick to fix.

4 boneless, skinless chicken breast halves
3-4 tbsp. mayonnaise (Hellmann's or Best Foods)
1 cup Italian seasoned bread crumbs (Progresso)
2-3 tbsp. olive oil

Place mayonnaise in Ziploc bag and add chicken. Close bag and knead with hands until chicken is covered with mayonnaise.

In a second Ziploc bag add the bread crumbs. Remove chicken from mayonnaise mixture bag and place in bread crumb bag. Close bag and shake lightly until chicken is coated with bread crumbs.

Heat olive oil in skillet over medium-high heat. Remove chicken from bread crumb bag and place in skillet. Brown chicken on both sides. Reduce heat to medium-low and cover skillet with lid. Cook chicken until done, about 8 to 10 minutes.

Note: Large, thick chicken breasts may need to cook an additional few minutes. Discard the Ziploc bags with any remaining mayonnaise and bread crumbs.
