PORK CHOP CASSEROLE 
4 center cut pork chops
1 bell pepper
1 sm. tomato
1 sm. onion
3 tbsp. oil
2 c. uncooked rice
2 cans Campbell's beef broth
Salt & pepper to taste

Brown pork chops in oil on both sides, using a large skillet. Pour off excess oil. Pour rice around pork chops and too each pork chop with 1 slice each of tomato, onion and bell pepper. Pour beef broth over mixture. Salt and pepper to taste. Bake at 350 degrees until rice is done and liquid is absorbed but not dry, about 30 minutes.
