SPICY CHICKEN WINGS 
8 broiler-fryer chicken wings, disjointed, tip discarded
2 tbsp. vegetable oil
3 scallions, chopped
1 clove garlic, minced
1/2 tsp. ground ginger
1 tomato, peeled, chopped
1 tbsp. soy sauce
1 tbsp. Worcestershire sauce
1 tsp. sugar
1 tsp. red wine vinegar
1/2 tsp. salt

In wok or large skillet stir fry chicken in hot oil about 4 minutes. Add scallions, garlic and ginger. Stir fry 1 minute. Stir in tomato, soy sauce, Worcestershire, sugar, wine vinegar and salt. Reduce heat and cover. Simmer, stirring often, about 12 minutes or until fork can be inserted in chicken with ease.
