LEMON ROASTED CHICKEN 
1 roasting chicken
2 lemons (cut 1 lemon in half lengthwise and slice each half. Pierce 1 lemon deeply several times)
8 cloves garlic, chopped
2 tbsp. fresh parsley
1 onion, quartered
Salt and pepper
Melted butter

Stuff chicken with 1 whole pierced lemon, parsley, onion, salt and pepper. Carefully loosen skin from chicken and stuff with sliced lemon and chopped garlic. Sprinkle on salt, pepper to taste. (Option: sprinkle on paprika). Baste with melted butter every 15 to 20 minutes. Bake uncovered at 350 degrees for 1 hour.
