BANANA CREAM PIE 
1/4 c. cornstarch
2/3 c. sugar
1/4 tsp. salt
2 c. scalded milk

Mix dry ingredients. Gradually add milk. Cook over moderate heat stirring constantly until mixture thickens and boils. Cook 2 minutes. Remove from heat. 2 tbsp. butter 1/2 tsp. vanilla

Add egg yolks gradually. Cook 1 minute stirring constantly. Add butter and vanilla. Cool slightly. Pour into prepared pie shell. (Baked crust with sliced bananas over bottom.) Chill thoroughly. Top with whipped cream.

VARIATION:

Use egg whites to make meringue. Add 1 tablespoon sugar per white. Beat. Spread over pie. Bake at 350 degrees 12-15 minutes. Then chill pie before serving.
