CODFISH FLORENTINE 
1 lb codfish fillet
4 tbsp. bread crumbs
1 tbsp. butter
1 lemon
2 tbsp. Italian parsley, chopped
sprinkling of garlic powder
sprinkling of paprika
2 tbsp. olive oil
1/2 can Hunt's fire-roasted garlic diced tomatoes (or any kind)
salt and pepper

Preheat oven to 400°F. When placing fish in oven, set to broil.

Arrange cod in a broiler pan. Top each fillet with a pat of butter; sprinkle lightly with garlic powder, bread crumbs and paprika. Broil until fish is opaque and flakes easily (about 8-15 minutes for thicker fillets but this depends on your oven, so watch carefully).

Remove from oven; drizzle very lightly with olive oil and squeeze fresh lemon over the top. Sprinkle with parsley and top each fillet with 4 tablespoons diced tomatoes. Season with freshly ground black pepper and salt to taste.

Serve with a lemon wedge or slice.
