PINEAPPLE DROP COOKIES 
3 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 c. sugar
1 c. shortening
2 eggs
2 tsp. lemon juice
1 c. crushed pineapple with syrup

Sift together first 3 items; set aside. Cream together sugar, shortening, until light and fluffy. Add well beaten eggs and lemon juice. Add dry ingredients alternately with pineapple. Mix well after each addition. Drop by teaspoon on greased cookie sheet. Bake at 350 degrees for 12-15 minutes. Makes about 6 dozen cookies.
