PINEAPPLE DROP COOKIES 
1 1/2 c. sugar
2/3 c. melted shortening
2 eggs
3 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. vanilla
1/2 tsp. lemon extract
1/2 c. crushed pineapple, drained

Cream together shortening, sugar, and eggs; add pineapple. Sift dry ingredients and add to mixture. Add flavorings. Drop by teaspoon on cookie sheet. Bake at 400 degrees for 12 to 15 minutes.
