OATMEAL BANANA LOAVES 
1 c. all-purpose flour
3/4 c. whole wheat flour
1 1/4 c. oats
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
3 eggs
1/4 c. sugar
1/3 c. oil
1 tsp. vanilla
1 1/2 c. mashed ripe bananas (about 3 medium)
3 tbsp. milk
1/4 c. chopped nuts (optional)

Stir together flour, oats, baking powder, salt, baking soda. Set aside. In large bowl beat eggs. Add sugar, oil, vanilla. Combine banana and milk. Add banana mixture to egg mixture alternately with dry ingredients. Stir in nuts. Turn batter into 6 mini-loaf pans. Bake at 350 degrees for 35 minutes or 12 muffins at 375 degrees for 20 minutes.
