NO-CRUST SPINACH PIE 
Strong spinach taste, but has a cheese taste and light in calories.

1/2 c. shredded Cheddar cheese
2 (10 oz.) pkgs. frozen chopped spinach, thawed and squeezed dry
3 eggs
1 (24 oz.) container 1% low fat cottage cheese
1 sm. onion
1/2 tsp. dried basil leaves
1/2 tsp. salt
1/8 tsp. pepper
Cornstarch
1 (8 oz.) container plain low fat yogurt

Preheat oven 375 degrees. Spray a 9 inch pie plate with cooking spray. Reserve 1 tablespoon shredded Cheddar cheese for topping.

In large bowl, mix spinach and rest of ingredients, 2 tablespoons cornstarch and remaining Cheddar cheese until blended. Spoon into pie plate.

In small bowl combine yogurt and 1 tablespoon cornstarch until well blended. Spread over spinach mixture and cover. Sprinkle with reserved Cheddar cheese. Bake 1 hour or until set. Let stand around 10 minutes for easy slicing.
