CRAZY CRUST PIE | |
Lightly grease and flour bottom and sides of 9 inch metal or 10 inch glass pie pan. Heat oven to 425 degrees. CRUST: 1/2 c. all-purpose flour 1/2 tsp. salt 1/2 tsp. baking powder 1/4 c. solid shortening 1/2 c. dairy sour cream 1 egg Lightly spoon flour into measuring cup, level off, combine all ingredients in medium bowl. Stir until blended (about 60 to 70 strokes, batter will be slightly lumpy). Spread batter thinly on bottom and thickly up side to within 1/4 inch of pan rim. Fill and bake according to individual recipes. Cool dinner 5 minutes before serving. Refrigerate leftovers. To reheat refrigerated dinners, cover and bake at 425 degrees 35 to 45 minutes. To reheat frozen dinners, cover and bake at 425 degrees 1 1/2 hours. FILLINGS: MEXICAN DINNER: and drained 1/2 c. onion, chopped 1 tsp. salt 2 tsp. chili powder 1/4 to 1/2 Tabasco sauce 1 (6 oz.) can tomato paste 1 (16 oz.) can kidney beans, undrained 1/2 c. tomato, chopped 1/2 to 1 c. shredded Monterey Jack or Cheddar cheese 1/2 c. lettuce, finely chopped Prepare crust. Combine all above ingredients, except lettuce, tomatoes and cheese. Mix thoroughly. Spoon into crust. Bake 20 to 30 minutes until crust is deep golden brown. Sprinkle with lettuce, tomato and cheese. Serve with taco or picante sauce if desired. BARBECUED BEEF DINNER: 1 lb. ground beef 1/2 c. green pepper or celery, chopped 1 tbsp. prepared mustard 2 tsp. Worcestershire sauce 1/4 c. onion, chopped 1/2 c. catsup 1 1/2 to 2 c. shredded Cheddar or American cheese Prepare crust. In large pan, fry beef and green peppers; drain. Stir in remaining above ingredients except 1 cup of cheese. Spoon into crust. Bake 18 to 28 minutes until crust is golden brown. Sprinkle with remaining cheese, return to oven to melt cheese. Sprinkle with paprika if desired. ITALIAN BEEF & CHEESE DINNER: 1 lb. ground beef, lightly browned & drained 1 tsp. salt 1 tsp. oregano 1/4 tsp. garlic powder 1/2 c. onion, chopped 1/2 c. olives, chopped (if desired) 1 (6 oz.) can tomato paste 1 (4 oz.) can mushrooms, undrained 1 to 1 1/2 c. Mozzarella, Cheddar or American cheese, shredded Prepare crust. Combine all above ingredients except cheese. Mix thoroughly. Spoon into crust. Bake 18 to 28 minutes until crust is golden brown. Sprinkle with cheese and return to oven to melt cheese. |
