PEANUT BRITTLE CHEESE COOKIES 
1 c. unsalted butter, softened
1 (3 oz.) pkg. cream cheese, softened
1 c. sugar
1 egg
1 tsp. vanilla
1 1/2 c. cracked peanut brittle
2 1/3 c. flour
1/2 tsp. baking soda
Sugar for topping

In medium size bowl beat butter, cream cheese and sugar on medium speed.

Add egg and flavoring; beat. Fold in peanut brittle. Add flour and baking soda, stir with wooden spoon to make soft dough. Cover bowl, refrigerate 3 hours. Shape dough into 1" balls. place 2" apart on ungreased cookie pans. Use fork tines to press into both directions. Sprinkle with sugar. Bake in 350 degree oven for 10 to 12 minutes. Cool on wire rack.
