POTATO POT PIE 
8 oz. mushrooms, sliced
1 1/2 c. plus 2 tablespoon salad dressing
2 c. turkey or chicken, cooked and chopped
1 pkg. (10 oz.) frozen mixed vegetables, thawed and drained
1/4 c. onion, chopped
1/4 c. flour
1 1/4 c. milk
1 tbsp. dried basil leaves
1/2 tsp. salt and pepper
1 1/2 c. Cheddar cheese, shredded
2 c. hot mashed potatoes

Saute mushrooms, onions in 2 tablespoon oil over medium high heat. Add flour and seasonings, gradually add milk, stirring until thickened. Stir in 1 cup salad dressing, turkey or chicken, vegetables and 1 cup cheese, cook 5 minutes. Spoon mixture into 1 1/2 quart casserole. Stir 1/2 cup salad dressing into potatoes. Top casserole with potato mixture, broil until golden. Sprinkle with remaining cheese, broil until cheese begins to melt. Serves 6.
