CHEESE CORN DIP 
1/2 cup American or Cheddar Cheese, 1/2-inch cubes
1 can sweet corn, drained
1 small can (about 4 or 5 oz.) chopped green chiles
1 tbsp. flour
1/2 tsp. garlic powder (optional)
1 tbsp. chopped pimientos or roasted sliced red peppers
Tortilla chips
paprika and parsley flakes, for sprinkling

Preheat oven to 350°F.

In a baking dish sprayed with non-stick spray, combine all ingredients (except chips). Bake until bubbly in hot oven, about 20-25 minutes. Sprinkle top with parsley flakes and paprika and serve with tortilla chips and/or strips of carrots and celery.
