MEAT LOAF WITH SHREDDED VEGETABLES | |
4 c. packed shredded cabbage 1 med. onion, finely chopped 3 tbsp. vegetable oil 1 c. packed shredded carrots 1 clove minced garlic 1 lb. chopped meat 2 eggs 1/3 c. bread crumbs 1 tsp. basil 1/4 tsp. oregano 1 tsp. salt 1/4 tsp. pepper 1/4 c. water 2 tbsp. white vinegar 1 med. potato, shredded Saute cabbage and onion in oil for 5 minutes. Add carrots and garlic until brown. Cool to room temperature. Preheat oven to 350 degrees. Combine beef, eggs, bread crumbs, basil, oregano, salt, pepper, water, and vinegar in bowl. Add vegetables; mix well. Shape into loaf in pan. Cover with foil and bake for 30 minutes. Uncover for another 30 minutes more baking. Let rest before serving for 15 minutes. |
