FABULOUS CARROT CAKE 
1 (20 oz.) can Dole crushed pineapple
1 c. butter, softened
1 c. brown sugar, packed
1 c. sugar
4 eggs
1 lb. carrots, shredded
1 c. raisins
2 tsp. vanilla extract
3 c. flour
2 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground ginger
1/2 tsp. salt

Drain pineapple well. Cream butter and sugars until light and fluffy. Beat in eggs. Beat in pineapple, carrots, raisins and vanilla. Combine remaining ingredients. Gradually beat into pineapple mixture until well blended.

Pour into greased and floured 9x13 pan. Bake in 350 degree oven 50-60 minutes until toothpick inserted comes out clean. Cool completely; spread with silky frosting.

SILKY FROSTING:

1 (8 oz.) pkg. cream cheese, softened
1/2 c. butter, softened
1 tbsp. lemon juice
1 tsp. grated lemon peel
1 1/2 c. sifted powdered sugar

Cream first 4 ingredients until light and fluffy. Gradually beat in sugar until smooth.
