ZUCCHINI CASSEROLE 
4 c. sliced zucchini
2 c. boiling water
2 eggs
1 c. mayonnaise
1 sm. to med. onion, chopped
1/4 c. chopped green pepper
1 c. grated Parmesan cheese
1 tbsp. butter
1/4 c. buttered bread crumbs

Cook zucchini in boiling water until just tender, drain. In large bowl, beat eggs. Stir in mayonnaise, onion and green pepper. Add zucchini. Put into 1 1/2 quart greased baking dish. Dot with butter and sprinkle with bread crumbs. Bake in 350 degree oven for 30 minutes or until bubbly. Bread crumbs optional.
