MEAT LOAF SUPREME 
1 lb. ground beef
1 lb. ground pork
1 c. shredded carrots
1 c. coarsely crushed saltine cracker crumbs
1 c. dairy sour cream
1/4 c. chopped onion
1 tsp. salt
Dash of pepper
Mushroom sauce

Combine all ingredients except mushroom sauce; mix. Press into 9x5x3 inch loaf pan. Bake at 350 degrees about 1 1/2 hours. Let stand 10 minutes. Remove from pan. Serve with mushroom sauce.

MUSHROOM SAUCE:

Dissolve 1 beef bouillon cube, crushed, in drippings from meat loaf. Combine with 1/2 cup dairy sour cream, 1 tablespoon all-purpose flour, and one 3-ounce can sliced mushrooms, undrained. Heat just until boiling. Serves 8-10.

NOTE: I double the sauce.
