TEXAN STYLE CASSEROLE | |
1 13 3/4 oz. can beef broth 1 6 oz. can tomato paste 1 pkg. taco seasoning mix 3/4 c. cooked rice 1 lb. ground beef 1 c. chopped onion 1 17 oz. can whole kernel corn drained corn chips 1 tomato diced In a small bowl, blend 1 cup beef broth, tomato paste and taco seasoning mix; set aside. In saucepan over high heat, combine remaining beef broth and enough water to equal 1 3/4 cup liquid; heat to boil. Add rice and cook according to package directions. In a large skillet, brown ground beef and onion; pour off fat. In 2 quart casserole dish, layer 1/3 each of the rice, corn, and meat mixture and reserved sauce; repeat layers twice, combining the last portion of meat and sauce for the top layer. Cover; bake a 375°F for 40 to 45 minutes or until hop. Garnish with corn chips and diced tomatoes. Make 4 to 6 servings. |
