MUSHROOM SALAD 
1 lb. fresh mushrooms, sliced
4 sweet gherkin pickles, finely chopped
2 tbsp. minced onion
1 clove garlic, minced
1 tomato, finely chopped
1/2 c. salad oil
1/4 c. vinegar
1/2 tsp. sugar
6 lettuce cups

Combine mushrooms, pickles, onion, garlic, and tomato; toss lightly. Add oil, vinegar, and sugar; toss lightly until mushrooms are well coated. Chill at least 2 hours. Serve in lettuce cups.
