CORN RO-TEL 
1 med. onion, chopped
1 clove garlic, minced
1 green pepper, chopped
1 can Ro-Tel tomatoes, chopped
1 can cream style corn
2 cans shoe peg corn, drained

Chop onion, garlic and bell pepper. Add Ro-Tel, creamed corn and shoe peg corn. Mix well and place in greased 9x13 pan. Sprinkle with 3/4 cup Italian bread crumbs and 1/2 cup shredded Cheddar cheese. Bake at 350 degrees for 40 minutes. Serves 8 to 10.
