CHICKEN BREASTS NEAPOLITAN STYLE 
2 tbsp. olive or other vegetable oil
2 tbsp. butter
3 whole chicken breasts, halved, boned & skinned
1-2 tsp. marjoram
1/4 c. grated Parmesan cheese
1/4 lb. mozzarella cheese, sliced
4 med. tomatoes, peeled, seeded & chopped or 1 (28 oz.) can tomatoes, drained & chopped
2 tbsp. chopped parsley

Heat the oil and 1 tablespoon of the butter in a skillet. Saute the chicken in the butter and oil until golden on both sides, but not cooked through. Place the chicken in a lightly buttered baking dish. Sprinkle each piece with the marjoram and Parmesan cheese, top with the mozzarella, then with the chopped tomatoes.

Dot with the remaining butter and bake at 350 degrees for 15 minutes, or until the cheese is melted. Serve immediately, sprinkling each serving with the chopped parsley. Serves 6.
