COCONUT CREAM PIE 
1 baked pie shell
1/4 c. cornstarch
2/3 c. sugar
1/2 tsp. salt
2 1/2 c. milk
3 eggs, separated
1 tsp. vanilla
1 c. flaked coconut
6 tbsp. sugar

Mix cornstarch, sugar and salt in a bowl for microwave. Cook stirring often until thick enough to mound slightly when dropped from spoon stir a little hot mixture into beaten egg yolks, then stir into hot mixture and cook a little longer. Stir in 3/4 cup of coconut and vanilla. Cool to room temperature. Pour into pie shell. Beat egg whites until stiff, add sugar 1 tablespoon at a time. Beat well after each addition. Stiff enough for soft peaks to form.

Since microwave ovens vary in power, you may need to adjust your cooking time.
