ONE-EGG CAKE 
2/3 c. sugar
1/4 c. shortening
1/4 tsp. salt
1 tsp. vanilla
1 egg
1 1/2 c. flour
1/2 c. milk
2 tsp. baking powder

Cream shortening and sugar. Add unbeaten egg. Add flavoring. Beat thoroughly. Sift flour, measure and sift with salt and baking powder, add milk. Bake at 375 degrees for 35 minutes. 12 servings.

VARIATION: PINEAPPLE UPSIDE DOWN CAKE:

Melt about 2-3 tablespoons butter in pan, add about 1/2 cup brown sugar and 1 (16 oz.) can crushed pineapple. Cover with 1 egg cake batter! Bake at 375 degrees for 30-35 minutes. 12 servings.
