BLUEBERRY ORANGE MUFFINS 
1 1/3 c. flour
1 c. quick oats, uncooked
1/4 c. firmly packed brown sugar
1 tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt, (optional)
3/4 c. fresh or frozen blueberries
2/3 c. milk
1/3 c. orange juice
1 egg, beaten
1/4 c. vegetable oil

Grease 12 medium muffin cups or line with paper baking cups. Combine dry ingredients. Gently stir in blueberries. Add combined remaining ingredients, mixing just enough until dry ingredients are moistened. Fill prepared muffin cups 2/3 full. Bake in preheated 400 degree oven for 18 to 20 minutes or until golden brown. Serve warm. Makes 12.
