RABBIT SOUTHERN STYLE | |
1 fryer rabbit (cut in pieces) 1/3 c. flour 1 tsp. salt 3 strips bacon 1 tsp. sage 3 tbsp. oil 4 CUPS WHITE SAUCE: 4 tbsp. butter 4 tbsp. flour 1 tsp. salt 1/4 tsp. pepper 2 c. milk Blend and cook sauce in saucepan until medium thick. Mix flour, salt and sage in paper bag and coat pieces of rabbit thoroughly by shaking in the bag. Saute rabbit pieces in hot oil until brown on both sides. Place in shallow baking dish and lay bacon on top; pour the white sauce over and around rabbit. Bake at 375 degrees for 2 hours or until tender. (Rabbit is high protein and low fat, low cholesterol, low salt and low calories!) |
