MUFFIN SURPRISES 
1 3/4 c. flour
1/4 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1 egg
3/4 c. milk
1/3 c. cooking oil
Jelly or jam

Heat oven to 400 degrees. Grease 12 muffin pans with shortening or use paper bake cups. Measure flour, sugar, baking powder and salt into a medium mixing bowl. Mix well.

Slightly beat egg in small bowl. Add milk and oil. Mix well with fork. Pour milk mixture over flour mixture. Mix well until flour is moistened. Batter should be lumpy. Do not stir too much or muffins will be hard. Spoon half the batter into muffin cups until 1/3 full.

Put a teaspoon of jelly or jam on the batter in each cup. Fill muffin cups with remaining batter. Place in oven and bake until muffins are golden, about 20-25 minutes. Cool 5 minutes. Makes 12 muffins.
