BAKED BEEF STEW 
2 lbs. lean stew beef
1 tsp. salt
Pepper to taste
2 tbsp. cornstarch
3 lg. potatoes, sliced
3 carrots, sliced
3 onions, sliced
2 lg. ribs celery, sliced
1 (12 oz.) can V-8 juice (can use tomato)

Place beef in bottom of oblong casserole dish. Sprinkle salt, pepper and cornstarch over meat. Add vegetables and cover tightly with foil. Bake at 325 degrees for 2 1/2 hours.
