CHEESY SCALLOPED POTATOES | |
6 to 8 med. potatoes, peeled 1 med. onion, chopped fine 1/4 tsp. salt 1/4 tsp. pepper 3 c. milk 3 tbsp. flour 3 tbsp. butter 3/4 c. American or Cheddar cheese, diced (I use more) Slice potatoes 1/8 inch; layer in buttered 2 quart dish with onion, salt and pepper. Melt butter and stir in flour. Add milk, stirring constantly, over low heat until thick; stir in cheese. When cheese is nearly melted, pour sauce over potatoes. Cover and bake at 350 degrees for 1 hour. Remove lid and continue to bake for 30 minutes more until golden crust forms on top. Makes 4 to 6 servings. |
