ZUCCHINI BOATS 
1 tbsp. brown sugar
6 oz. cooked carrots
1 zucchini, cut lengthwise & hollowed out like boats
1 tsp. uncooked honey
1 oz. heavy cream
Salt & pepper to taste

Puree cooked carrots in blender. Add honey and cream and put in both zucchini shells. Sprinkle with brown sugar and broil for 2 minutes.

Serves 2.
