APPLE SWIRL CAKE 
2 c. apples
3 tbsp. sugar
1 tsp. cinnamon
2 c. sugar
1 c. cooking oil
4 eggs
1/4 c. orange juice
2 tsp. vanilla
3 c. sifted flour
1 tsp. baking powder
1/2 tsp. salt

Peel, core and chop apples into small pieces; mix together with 3 tablespoons sugar and cinnamon. Set aside. In large bowl combine sugar and cooking oil; beat. Add eggs, orange juice and vanilla; mix well. Sift together flour, baking powder and salt. Add to creamed mixture. Beat until smooth. Pour 1/3 batter into greased and floured 12 cup bundt pan alternating with 1/2 of apple mixture. Repeat. End with layer on batter on top. Bake at 325 degrees for 60 minutes or until cake tests done. Cool in pan 10 to 15 minutes; turn out on wire rack to cool. Sprinkle with confectioners' sugar.
