CHICKEN SUPREME 
4 boneless, skinless chicken breasts, cubed
2 eggs
2 c. bread crumbs (I use the Italian seasoned type)
1/4 tsp. salt
1 tsp. parsley
1 lb. muenster cheese, shredded
12 oz. mushrooms, sliced

Beat the eggs in a mixing bowl, and add the chicken. Let marinate in the refrigerator for 2 hours.

In a separate bowl, mix the bread crumbs, salt, and parsley. (I also add some garlic powder, sweet basil, and poultry seasoning.) Coat the chicken with the mixture, and brown over medium heat in oil or butter. This only takes a few minutes.

In a 9 x 13 pan, add half the chicken and top with half the mushrooms, then half the cheese. Repeat.

Cover with foil and bake at 350°F for about 40 minutes.
