HERBED SCALLOPED TOMATOES 
4 c. tomatoes, cut up (either canned or fresh with skins removed)
2 1/2 c. herb stuffing mix
1 sm. onion, chopped
1/2 tsp. salt
1/2 tsp. oregano
Pepper to taste
1/4 c. butter
2 tbsp. sugar

In buttered 2 quart casserole dish, mix together tomatoes and 2 cups of stuffing mix. Stir in rest of ingredients reserving the remaining 1/2 cup stuffing mix. Sprinkle reserved stuffing mix over top of tomato mixture. Bake at 375 degrees, uncovered for 45 minutes.
